Homemade Burgers For The Win! 😎

Summer time!

We tend to what seems like eat way more in the summer months!
Maybe it seems like it, maybe because I don’t want to cook, when it’s so nice out.
Who want to do the same thing everyday like cook supper when you can be out playing in the sun.
This is a reason why I love freezer meals, but if freezer meals is not your jive, or you don’t have any on hand.
Have no fear mama Kandis is here lol.
Hi I’m Kandis a stay at home mom and wife. I have 4 children ages from 12 down to 2 years! I tell you food can go fast here, I’m always thinking on what’s the next thing to make! What to do for supper again tonight Lol!🤣
So let’s talk burgers, easy, fast and will save you money!
Sounds magical to me lol, so let’s start!
There is always those go to summer meals. Those foods that seem ok to constantly eat over and over in the summer.
In this house one of our staple go to foods is good old burgers!
What is your staple summer foods, something that no matter what the family will eat and usually enjoy!
With burgers it’s just easy right!
Make a salad, or some fries or just have the burgers! Grill them, bake them fry them it does not matter!
Have them at home, bbq at a friend’s house or camping!
You can have them anywhere!
So here is how I make my burgers that take only minutes to get ready.
Pre cook some pop them into the freezer, or leave them uncooked and freeze them.
It does
Either way that works or just eat them all and save none because, well they are yummy haha.
I have been making my burgers this way for years, and I will not stop making my homemade burgers. Actually would you believe me when I say I have not had a premade burger in at least 8 years. 🤤
That is really how quick and easy and of coarse delicious they are!😉

This is a recipe that can be make small or big you will see how easy it is to make lots at once.

You will need for a batch is:

  • 1 pound ground beef
  • 1 cup rolled oats
  • 1 egg
  • Diced onion
  • Spices what ever spices you want I use parsley,garlic powder, onion powder and paprika

In a bowl mix all together
I use a measuring cup usually at least 1/4 cup
Scoop meat mix and flatten into a patty, place on cookie sheet and repeat!
Yap it’s that easy!

Grill, bake or fry about 10 min per side or until cooked all way through depending on the size of burgers you have made!

Then sit back and enjoy!

I hope this helps get you through some of the summer days of the cooking cleaning, and repeat.
Go ahead and make a batch or 2 or 3 lol it will come in handy as the days get hot and the nights get long!

Go To Cake Recipes!

Birthdays, holidays, class treats, after school activities, weekend parties!

These are some reasons I love my go to cake/cupcake recipe. Chocolate, vanilla or marble always great choices.

When something comes up there isn’t always time to find a recipie, then wonder if it’s right?

Will it be ok?

Is it the right thing?

In this house if a emergency goodie day comes up I usually have it under control.

If I’m not whipping up a batch of cookies you betcha I’m going to one of these recipes!

As a mom of 4 and 2 of them in school days come up that I need to get something together quick.

I am not down the street from a store and that’s not my style lol. These batters are great for fast cupcakes or a cake! I have a chocolate batter also a vanilla batter!

Let’s start with the fudge chocolate cause yes please it’s chocolate! This is a great one, I have been going to it for years now!

The stains on the page show it!

  • 1 2/3 cup flour
  • 1 1/2 cup sugar
  • 2/3 cup COCOA powder
  • 1 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cup buttermilk
  • 1/2 shortening
  • 2 eggs
  • 1 teaspoon vanilla extract

Heat oven to 350°

Grease pan using either 13x9x2, 2 round pans, or 2 bundt cake pans.

Beat all ingredients together on low making sure to scrap the sides of the bowl, do this for about 30 seconds, then mix on high till mixed well.

Bake until wooden pick comes out clean. 35-40 minutes for oblong, 30-35 minutes for round, and 40-45 minutes for bundt cake, 20 minutes for cupcakes. Let completely cool then frost.

Then let’s do the vanilla! This is a denser cake, I find anyways. With it just as easy as the chocolate you still can’t go wrong. One thing I love about going to a vanilla cake is that you can the the cake to any color you need! The vanilla cake is called ” silver white cake”.

Let’s see what and how to make this go to vanilla cake.

  • 2 cups flour
  • 1 1/2 cup sugar
  • 3 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup shortening
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 4 egg whites

Heat oven to 350°

Grease pan

Beat flour, sugar, baking powder, salt, shortening, milk and vanilla extract. Mix on low scrapping the sides for about 30 seconds. Beat on high still scraping the bowl till mixed. Pour into pan/s.

Bake until wooden pick comes out clean. Oblong 35-40 minutes, 30-35 minutes for round or 20 minutes for cupcakes. Let completely cool then frost.

There you have to!

These are the two go to batters I go to whether for cakes, cupcakes or both.

Homemade Chocolates!

Have you ever noticed how there is not a holiday where chocolate is not acceptable? Why is it that chocolate goes up in cost at the holidays?

Hi good morning welcome to Its A Mom Life, I’m Kandis and I love chocolate. Well sweets for that matter, when it comes to will power I have none, when it comes to sweets!
I love baking which does not always help. The only good thing is I can say it’s healthier as I’m stuffing my mouth lol!

I thought I would share how I made very easy, basic chocolates for Easter this year. This is how I melt all chocolate for baking also. I use a double boiling pot method!

I do this way as chocolate burns easier then one thinks. This just makes it a little more fool proof as you melt the chocolate.
For this method simply take 2 pots, one that will fit in the other.
Add water to the bottom pot, place smaller pot in water.
Heat on low to medium heat. Add your chocolate to the empty pot, stir while it melts.

For these chocolates I used white chocolate squares and semi-sweet chocolate squares. In two separate pots I melted both kinds, when the chocolate is completely melted it was easy peasy.

All required is then to scoop the chocolate into the molds. Half I did white chocolate first then dark chocolate. The other half was done the opposite way. Then slightly bang on counter to even out and release any air bubbles that may be in there. Chill in fridge or freezer!

That is all there is to making homemade chocolates. If you want to make it fancier you can add nuts, sprinkles or even edible glitter sprinkles. The choices are truly endless.
Once you got your chocolate base it’s all fun from there.

Blueberry Muffins!❤😍

Muffins…. Is there anything better then a muffin batter that can have anything added too!
They freeze great, pull one out put into the kiddos lunch, and it’s ready for lunch time!

In 30 minutes you could have fresh muffins! Does that sound great or what?

My daughter and I made blueberry muffins on the weekend, they are too good not to share.

This is put of a Betty Crocker cookbook! For this foolproof muffin batter you are going to need:

  • 1 egg 
  • 3/4cup milk 
  • 1/2 cup oil 
  • 1/3 cup sugar 
  • 3 teaspoons baking powder 
  • 2 cups flour 
  • 1 cup of whatever fruit you want to add. 

We obviously used 1 cup blueberries.
Yes, they were frozen, you can use fresh or frozen.

Preheat oven to 400° in a mixing bowl add egg milk oil and sugar mix together. Then add flour with baking powder to bowl. Mix well until combined batter will be lumpy. Stir in fruit.
Grease muffin tin fill about 2/3 ways full. Bake about 20 minutes u til golden brown. Cool completely on cooling tray. Makes about 1 dozen.
Yap that easy. Give it a try with so many variations you can make, it will be a crowd pleaser. My son and I also made oatmeal raisin!😍
Same recipe only add 1 cup of raisins to milk and decrease flour to 1 cup and add 1 cup rolled oats!

Well That Was Easy!

Good morning everyone and welcome to Its A Mom Life.
Today’s is Tuesday and just such a busy one at that. Today in thought I would share my supper with you! It’s a busy evening again here in the Blask house.
With there being basketball practice and parent teacher conferences before supper, I thought why not run to the city also this morning to get a couple things for Easter, and do a quick grocery pickup! Have you tried grocery pickup? It truly is a game changer I think.
With all this happening all before 5 pm, there isn’t much time for much in between. So when in doubt bring the slow cooker out! I thought I would do up that red pork tenderloin that in had shared before, but we are going to try it in the slow cooker. This way I also have a supper plan for tomorrow also, they are going to have pull porked sandwiches.❤
With this recipe you need:

  • pork tenderloin 
  • 1/4 cup soya sauce 
  • 2 tablespoons sugar 
  • 1/4 teaspoon cinnamon, cloves, ginger and garlic powder 

mix together in a bowl pour on the tenderloin and let sit about 30 minutes.
Usually I would do this is the oven but I’m going to try this way. I have a blog about how to do it in the oven you can head over too,if you want to cook it in the oven.
Got a good slow cooker recipe let me know if you do I would love to hear them!
With this supper I am going to try to get potatoes peeled then it will be served mashed potatoes and mixed veggies. However we will see how time works for me, if not it will be rice instead, and call it good.
I’m in the process of getting my next blog out, and house prepped now for Easter. I’ll be showing you what I am doing this year, also on an upcoming blog.
There is only the young ones here with us this year, it’s sure to be a cute time.

Red Tenderloin!!

Hello and good morning how are we doing this Thursday! Welcome to Its A Mom Life  where I aim to have mothers come together to tackle every day situation that a mother handles.
Today I would like to talk about a fantastic recipe for cooking a pork tenderloin. This is an easy recipe to do a big or small tenderloin. You can cook it in the oven or on the bbq!
I find a great way to save is to buy whole tenderloin, so a good go to sauce is wonderful. This recipe calls for 2 lb tenderloin.
If your ready grab a paper and pen as you will want to write this one down, and give it a try!
What you will need is

  • 2 lb tenderloin 
  • 1/4 cup soya sauce 
  • 2 tablespoons sugar 
  • 1/4 teaspoon of each cinnamon, cloves and garlic powder. 

Mix together and marinate meat for at least 30 minutes.
Preheat oven to 425° cook for 15 minutes uncovered.
Reduce heat to 350° cover and cook for another 30 minutes. Let sit for 10 minutes, slice diagonally.
This is paired with any side and is so good.

Can’t Go Wrong With Vanilla!

Hello and welcome I’m Kandis thank you for checking out the blog here on It’s A Mom Life!
It’s a recipe day, and for this Thursday’s recipe let’s make a vanilla cake!❤
It was recently my birthday, another year older, and a little wiser.
This year was harder, as with the new baby I’m a breastfeeding mother, with this I have always had to follow a strict diet, as my babies were gassy on a lot of food!
Did you have this problem? I would love to know if I’m not the only one that had to really watch what I ate, or I was in for a gassy baby and some long days!
With this said I really wanted a cake for my birthday I turned 31😐 and deserves a cake haha.
So thinking the safest thing to try would be vanilla.
What about you yeah or nah on vanilla? Let me know in the comments down below. So after school, and outside fun the kids and I whipped up a cake. Sorry I didn’t get pictures of us doing this together as I was a little tied up, and I am still learing and trying to remember to take pictures for the blogs.
Prego brain I think is real and does not leave lol. I how ever still have some pictures still for the blog! Any who let’s get to the recipe!
For this amazing vanilla cake which by the way I have been using this recipe for years, it is my go to for vanilla batter which is out of the betty Crocker cook book that was my mother’s.
What you will need is :

  • 2 cups flour
  • 1 1/2 cups sugar 
  • 3 1/2 teaspoon baking powder
  •  1/2 cup shortening ( I use oil usually)
  • 1 cup milk
  •  1 teaspoon vanilla
  •  4 egg whites

 mix together until smooth and then bake.
Preheat oven 350° bake until comes out clean either 35-40 min oblong pan, 2 layer cake is 30-35 minutes or cupcakes about 20 min. That is all for this cake, it is simple and so good.

Sweet And Sour Sauce!

Hello and good morning welcome to Its A Mom Life!
This wonderful Thursday for recipe is a yummy one, and is good on so much stuff!
I like to whip this sauce up for lots, however I love to put it on meatballs on a bed of rice!👍
This makes for the perfect quick fix supper on any night!
With this recipe it calls for:

The meatballs are:

  • Onion diced
  • Warcheshire sauce
  • 2 pounds ground beef
  • 2 cups rolled oats or bread crumbs
  • An egg
  • 1/2 cup milk

Combine all ingredients and roll into balls line in bake dish cook 400° for 35 minutes or until done!

The sauce you will need:

  • 2 cups packed brown sugar 
  • 1/4 cup flour
  • 1/3 cup water 
  • 1/2 cup white vinegar 
  • 2 tablespoons soya sauce 
  • 2 tablespoons ketchup 
  • 1/4 teaspoon ginger 
  • 1/4 teaspoon garlic powder.

Mix together in a sauce pan and stir, bring to a boil until thickened. Add meatballs or pour over! It is that simple and yes that yummy.

Oh My Waffles!

Hello and welcome to Its A Mom Life. Happy Thursday which means it’s a recipe blog! A good day for one I think with the weekend coming up!
This recipe is for Waffles, they are super yummy I might point out. We usually try to aim for waffles or pancakes on Saturday morning, as this usually leans towards waffles tho. Do you have a go to Sautday morning breakfast in your house?
These are easy to make and the batter can be prepped the night before and stored in the fridge!
For this yummy waffle batter you will need:

  • 1 1/2 cup flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup of butter (melted)
  • 1 1/2 cups buttermilk
  • 1 egg

In a bowl combine flour, baking soda and powder then mix the liquids in the milk, butter and eggs slightly beaten mix with the flour mix.
Mix until combined it may be lumpy. I find a wisk works well for getting it mixed good.
Let the batter sit for about 5 minutes Heat your waffle iron, I usually let mine what up for 5 minutes which is perfect while letting the batter set!
Then just cook in waffle maker usually about 5 minutes each.
This makes about 4-5 waffles, they also freeze great, this makes a great freezer breakfast!
I almost always make a double batch, then I just go up from there depending on how much I want in the freezer!

Supper Again? No Worries

Hello and good morning welcome to Its A Mom Life.
For this Thursday recipe blog I will be sharing a yummy and easy supper to make.
I had got this recipe off a vlog a while ago from a lady Kimmy from She’s In Her Apron, link will be below. I had never heard of it, and neither has lots, I am actually thinking it’s an American dish! Let me know if you have heard of it?
Supper is going to be Salisbury steak! This is a yummy,easy and fun supper. Everyone in our house likes it, and be made early and left on warm!
So here we go I will show you how to make it, give it a try let me know what you think!
To make all you need is:

  • 1 lb ground beef 
  • Mushrooms sliced or a can
  • diced onion
  • garlic
  • 1/2 cup bread crumbs or rolled oats
  • wasceshire sauce
  • 1 egg,
  • 1 cup water or beef broth
  • 2 tablespoons flour
  • 2 teaspoons mustard (optional)
  • 2 teaspoons of butter.

So now to make it happen!
For the hamburger steak: combine ground beef, onion, garlic,egg and wasceshire sauce. Mix well and make into patties.
Fry them on both sides till cooked about 10 minutes a side depending on size of patties.
For the sauce melt butter in pan add mushrooms and onion and fry about 4 minutes then add your beef broth, flour and mustard whisk until thickened.
Add patties to sauce put on simmer and cover until ready to serve!
That is all there is to these easy yummy Salisbury steak. Serve it with come mashed potatoes we did homemade air fries with some  steamed veggies!
