Treats In The Kitchen

Hi good morning welcome back to Classic Classics By Kandis!

This week we had a busy week, and last week for that matter we had a busy week in the kitchen!

Last week I started doing my Christmas baking now, remember I was saying that because do the Covid I’m trying to not do as much baking, it’s not that I’m not doing as many as I am trying not to do as big of batches!

I always have my standard Christmas cookies that we tend to have in the house and I tend to do quite the variety however, this year I am not doing any cookie trays and not giving any out on my Facebook page!

This is some local Christmas fun at this time that I try to do online and one of the local winners get a dozen cookies from the cookies that I am making that week! However, with Covid I am not giving out any cookie trays this year so instead of making three or four batches of everything I am really only trying to do one or two batches of each cookies, but then I still have my tarts on top of that there is always a lot of goodies here at Christmas time!

I thought this week with the start of Christmas baking and my son’s birthday party last weekend, while his birthday we just had a birthday party at the house with us as we have a family of 6!

Every year I always make my kids birthday cakes this year was no different, this year he wanted a black forest cake the same that his dad had!

His dad always have a black forest cake it is a favourite kind of cake so, I thought I would use this week’s blog and share my recipes from the week!

I have a gingerbread cookie recipe, sugar cookie recipe, and a recipe for a black forest cake!

Depending on what is going on that week I will try to just make my cookie dough and then during the spare times of the day or at the evening is when I will try to do the rolling and to bake them and possibly decorate, depending on the type of cookie!

What is your favourite kind of cookie for Christmas?

I have lots of favorite kinds of cookies that’s why I have lots of cookies in my house but, I have to say one of my favourite cookie is is the candy cane cookies that I make with my kids.

My mom used to make all the time when I was little I am making those cookies either later this week or next week!

I tend to do a bit of baking I bake something usually every week unless it’s Christmas time and then I am baking more than one thing all week haha!

Let’s go ahead and start with the black forest cake.

BLACK FOREST CAKE

You will need :

  • 1 2/3 cup of flour 1
  • 1/2 cup of sugar
  • 2/3 cup of cocoa powder
  • 1 1/2 teaspoons of baking soda
  • 1 teaspoon of salt
  • 1 1/2 cups of Buttermilk
  • 1/2 cup of shortening
  • 2 eggs
  • 1 teaspoon of vanilla.

Pre-heat your oven to 350 degrees grease pan this’ll do a 13 by 9 pan or two round layer pans or 1 12 cup bundt pan.

Be all the ingredients together in a mixing bowl, scraping the sides. Beats on high for both 30 seconds then scrape the sides again!

Place into your pan and bake until a wooden pick comes out clean for an oblong pan bake for 35 to 40 minutes layers is 30 to 35 minutes in a bundt cake is 40 to 45 minutes like completely cool before adding frosting.

GINGERBREAD MEN

For the gingerbread man I used a recipe out of my book called The Ultimate cookie book! I got this years ago as a Christmas present for my mother-in-law and it has a lot of go to cookie recipes! I have to say they made a little better Ginger Snap cookies then they did to try to roll out to make gingerbread cookies! The gingerbread men turned out okay but they flattened a bit more than what I would usually do. The nice thing about that this year is that the cookies are only for the house so they really didn’t need to be perfect this year because I know none of my kids are going to complain about the cookies.

You will need:

  • 1/3 cup of butter softened
  • 1/3 cup shortening
  • 1 cup sugar
  • 1/2 cup of packed light brown sugar
  • 1 teaspoon of baking soda
  • 1 teaspoon of ground ginger
  • 1/2 teaspoon of cinnamon
  • 1/2 teaspoon of nutmeg
  • 1 egg
  • 1/4 cup of light molasses… I use dark it worked out fine I assume it’s just kind of more of the taste that it changes
  • 2 tablespoons of coffee liqueur strong coffee or milk
  • 2 1/4 cups of flour.

In large mixing bowl beat your butter and shortening together for about 30 seconds as your sugar, brown sugar, baking soda, ginger, cinnamon, and Nutmeg. Keep beating scraping the sides of occasionally. Then you can beat them in the egg, molasses, and the coffee or milk whichever one you were using! Beat as much flour in as you can with the mixer if you have to finish mixing flour in by hand then do it that way! My KitchenAid mixer made it all no problem.

Pre-heat your oven to 350 degrees F you can lightly Grease the cookie sheet, roll out your cookies or scoop them depending on how you were going to make them! Place some on your cookie sheet and bake for between 6 to 8 minutes until the edges are light brown!

Let them stand on the cookie sheet for a couple minutes, after they’re done before you put them on to a cooling rack to finish cooling completely before storing or decorating.

They didn’t roll the best, but they are yummy!

Sugar cookies

Sugar cookies will make roughly three dozen cookies!

You will need:

  • 2/3 cups of butter softened
  • 3/4 cups sugar
  • 1 teaspoon of baking powder
  • 1 egg
  • 1 tbsp of milk
  • 1 teaspoon of vanilla
  • 2 cups of flour.

You want to chill the dough into the fridge for at least 30 minutes if not longer, pull out let sit for a little bit until you can work with the dough and then you can start to roll and cut .

Pre-heat your oven to 375 degrees F bake for between 6 & 8 minutes depending on how thick your cookie is until the edges are nice and golden brown!

Let’s sit for a minute or two before transferring onto a cookie sheet like completely cool before decorating and store.

Well, that was the first week of my Christmas baking of course with my kids birthday cake, it’s only some Christmas cookies!
